The Best Ever Cookies!

Two years ago, I discovered the best cookie recipe ever! This recipe makes Mrs Field's cookies seem like boxed cookies. Think I'm kidding? Try them out for yourself! Today, I made 2 different batches for my husbands coworkers. The first batch I made my classic chocolate chip cookies. The second batch, I decided o spice it up a little. I added some peppermint baking chips in with it, and let me tell you, they were amazing! My husbands coworkers absolutely love these cookies. They request them all the time, and they rave over them. Since I made the batches, I figured now was the best time to share them.

Original Chocolate Chip

Peppermint Chocolate Chip

The best chocolate chip cookie you will ever eat

2 C flour
1/2 t salt
1/2 t baking soda
3/4 C butter melted
1 C brown sugar
1/2 C white sugar
1 whole egg
1 egg yolk
1 TBSP vanilla extract (1/2 TBSP if using real vanilla)
2 C semisweet chocolate chips

Preheat oven to 325. Mix together the flour, salt, and baking soda in a small bowl and set aside for later. Melt the butter. Cream together the butter, brown sugar, and white sugar. Once mixed together, mix in the egg, egg yolk and vanilla. Slowly add the dry ingredients set aside into the wet mixture.  When the dough is made, dump the chocolate chips in and mix it all together with a spoon. Scoop the dough onto greased cookie sheets and bake for 12 minutes. I usually get 3 dozen small cookies out of one batch. It is important to bake for only 12 minutes. The cookies may seem slightly doughy still, but as they cool they finish cooking all the way through. It is the secret to these cookies. They end up being the perfect texture. Cook any longer, and they end up being too hard and brown.
