Cheesy Chicken and Rice With Corn

This is a super easy throw together recipe that involves the best appliance ever. The Crock Pot!!! It is very much a comfort food and only involves 6 ingredients



Cheesy Chicken and Rice with Corn

1 can cream of chicken soup
1 Lg onion (I use a white onion)
3-4 boneless skinless chicken breasts
1 can of corn drained
1 C shredded cheddar cheese
1 box yellow rice

Place chicken at bottom of crock pot. Chop up onion and put over chicken. Spoon soup from can on top of the chicken (Do not dilute the soup). place the lid on the crock pot/slow cooker and cook on low 7-8 hrs, or high 3-4. Before the chicken is finished cooking, you will need to prepare the rice as directed on the box. I like to do it the night before and refrigerate. After the chicken has finished cooking shred it with two forks, put rice, cheese, and drained corn in with the chicken. mix to combine. serve hot and enjoy.
