Creamsicle Cupcakes




For the cupcakes:
1 box white cake mix (prepared as packet directs, substitute 1/4 of the water required with the orange juice)
1/4 C orange juice
1tsp orange zest
1tsp orange extract
1 3oz packet orange jello (powder only. Do not prepare jello)

For the Frosting:
2 sticks of unsalted butter at room tempurature
1 8oz packet of cream cheese at room tempurature
5 C powder sugar
1 TBSP Orange zest
1/2 t vanilla
1 tsp orange extract
Orange food coloring

Preheat oven to 350
Combine all ingredients for cupcake batter. Mix well. Line cupcake pan with liners. Fill liners 3/4 full. Bake at 350 for 18-20 min. Test after 18 min by sticking toothpick in center of cupcake. If it comes out clean, the cupcakes are finished. Let cool in pan for 5 minutes, than place on cooking rack until fully cooled. Makes approx 24 cupcakes

Prepare frosting:
Mix together butter and cream cheese until creamy and fully combined. Add powder sugar 1 C at a time until fully incorporated. Mix in orange zest, vanilla, and orange extract. mix well. Add in food coloring until desired color is reached. I couldn't find orange food coloring, so I mixed 2 drops of red, and 2 drops of yellow. It was the perfect light orange color.
